● Complete support for first time! We will teach you a technique that takes about 30 minutes.

Noodle making is a science, and students learn how to mix the flours and water to be added.

Kneading is used to draw out the gluten, and special tools are used to form the dough into squares.

Learn how to stretch dough to a consistent thickness without losing its shape with a rolling pin.

The noodle-slicing technique, which has been used since the Edo period, is used with a large knife.

●The cut ramen noodles are professionally boiled by our staff and served.

● You can experience toppings by each flavor at your seat.

Ramen Flavor

This is Rakujyo’s original and advanced system that allows you to make your own noodles and dine on them with the flavor of your choice.
Please choose to your heart’s content.

You will also be responsible for arranging the ingredients for the ramen yourself.

Classic Soy Sauce Ramen

The soup is made mainly from chicken bones, with bonito flakes, kelp, vegetables and a secret ingredient: a ramen soup that is a classic that anyone can enjoy.

Aged Miso Ramen

Red miso, white miso and a secret ingredient give it richness, and the complex flavour of the blend of the most numerous ingredients is left to rest for a mellow taste.

Salt Ramen

The chicken bone-based sauce has a tendency to be sharp, but the salty sauce has been mellowed out, and the refreshing citrus flavor makes it an exquisite soup that you’ll want to drink down in one gulp.

Soy-milk Tonkotsu Ramen

Tonkotsu soup can easily become heavy when diluted with chicken broth, so we dilute it with soy milk to give it a creamy, rich flavor.

Soy-milk Soup Curry(for Vigan)

The soup is made with plenty of vegetables and seasoned with a hint of curry powder. The soy milk base gives it a mellow flavor, and the topping vegetables really stand out.

Wakame Ramen(for Vigan)

A soothing drink made with kelp stock and tamari soy sauce, with the aroma of the seaweed spreading out softly. The mellowness is enhanced by the addition of sesame seeds.

Asari Shijimi Ramen

The soup stock is made from fresh shijimi clams and topped with steamed clams in sake. The umami of the succinic acid from the shellfish combines with the butter to create a bowl that you’ll want to drink down to the last drop.

【Please note】If there are more than three people, we ask that you limit the number of flavors to two. We would appreciate it if you could cooperate with us as it is necessary for us to serve the food quickly with a minimum staff.
【Please note】On weekends and holidays, especially during lunch hours, we ask that you leave the table after about 30 minutes to allow time for the next customer to enjoy his/her meal.

Ramen Slashing Experience FAQ

Of course. We view this as a food education program where you can learn the hard work of making things and the steps of food preparation by experiencing it with your children. We believe that it is important for children to simply enjoy the experience.

This plan is called the Private Plan, and up to 6 people can apply for this plan at the same time. For more than 6 people, the price will be 6,500 yen per person for the Team Building Plan.

 
 

 

 

The process seems similar, but is quite different due to the characteristics of wheat and buckwheat flours. We do not offer a mixed experience because each requires time to explain the process, which is time consuming and interminable.

No, we believe that soup making is not something that people teach you. It is a place where you work hard in solitude. The broth is taken from a variety of ingredients for several days in advance, so it cannot be mastered in a one-hour experience.

There is no time for aging in the experience. The noodles are not made by machine, which is a method to squeeze out as much water as possible, but by human power to knead them. The result is a very smooth noodle that is unlike anything you have ever experienced before.

Our store is a hands-on store and should be considered a fun activity to experience. We hope to inspire you to want to learn in earnest. We do issue cards for more casual workshops.
